Watermelon Salad

This is our go to side dish for any barbeque. The combination of the sweet and salty is too good to resist!

Prep time: 20 minutes

Serving size: 6

Ingredients

  • 1/2 watermelon

  • Juice of 1 lime

  • 1 tbs of fish sauce

  • 1 tps of sesame oil

  • 1/2 tbs of gluten free soy sauce

  • 2 Persian cucumbers

  • 1/4 cup of pistachios

  • 1/2 cup of feta

Instructions

  1. Cut your watermelon half into 1-inch cubes and add to your bowl.

  2. Cut your cucumbers in half and then into half-moon shapes. Once completed add to the bowl.

  3. Add your feta and pistachios to the bowl.

  4. In a small bowl whisk the lime, fish sauce, sesame oil and gluten free soy sauce.

  5. Toss the salad in the dressing. Serve immediately. Enjoy!
