Watermelon Salad
This is our go to side dish for any barbeque. The combination of the sweet and salty is too good to resist!
Prep time: 20 minutes
Serving size: 6
Ingredients
1/2 watermelon
Juice of 1 lime
1 tbs of fish sauce
1 tps of sesame oil
1/2 tbs of gluten free soy sauce
2 Persian cucumbers
1/4 cup of pistachios
1/2 cup of feta
Instructions
Cut your watermelon half into 1-inch cubes and add to your bowl.
Cut your cucumbers in half and then into half-moon shapes. Once completed add to the bowl.
Add your feta and pistachios to the bowl.
In a small bowl whisk the lime, fish sauce, sesame oil and gluten free soy sauce.
Toss the salad in the dressing. Serve immediately. Enjoy!
