Gluten Free Foccacia

Who says gluten free bread has to be dry and gross? I am by no means a baker but if I can make this delcious bread than you can too! This easy side dish is great for any Italian meal but we prefer to serve with some homemade tomato soup. Enjoy!

Prep time: 20 minutes

Rise time: 30 minutes

Cook time: 35 minutes

Ingredients

  • 3/4 cup of water

  • 3/4 cup of lactose free milk

  • 1 package of dry active yeast

  • 2 1/2 cups of gluten free flour

  • 1 tablespoon of granulated sugar

  • 1 teaspoon of baking powder

  • 1 teaspoon of salt

  • 3 tablespoons of olive- more olive oil required for coating the pan

  • Optional toppings: flaky salt, fresh rosemary or sun-dried tomatoes

Instructions

  1. Combine the lactose free milk and water into a microwave safe dish and microwave for one minute.

  2. Sprinkle the active yeast into the milk water mixture and stir with a fork. Once stirred let the mixture sit for 5 minutes.

  3. While the mixture is sitting add the flour, salt, baking powder and sugar to the bowl of a standalone mixer. Give the dry ingredients a good mix with a spatula or a wooden spoon to make sure everything is mixed in.

  4. Once the 5-minute timer is over add the milk mixture to the flour mixture along with the 3 tablespoons of olive oil.

  5. Using the paddle attachment of your standalone mixer beat on low for 1 minute.

  6. Increase the speed to medium high and continue to mix for 6 minutes.

  7. Take your cast iron pan and generously coat the bottom with olive oil. Be sure to swivel the pan around so the olive oil is fully coated around the bottom of the pan and well as the sides.

  8. Add the dough mixture to the oiled cast iron. Add a little bit of olive oil to your fingers so that you may gently push the dough to sides of the pan.

  9. Once the dough is level on your pan use your fingers to make indentations to the bread.

  10. Add your desired toppings. Our go to is Mandalon salt with fresh thyme and rosemary.

  11. Set the pan aside uncovered to rise for 30 minutes and preheat the oven to 350 degrees.

  12. Once the 30 minutes is up add the cast iron to the oven to bake for 30 minutes.

  13. Check your bread after 30 minutes. If your bread is golden brown take out of the oven and enjoy!
