Quick Pickled Cucumbers

The perfect side dish to accompany any asain inspired meal.

Prep time: 10 minutes

Marinade time: at least 20 minutes

Serving size: 4

Ingredients

  • 4 medium sized Persian cucumbers

  • 2 1/2 teaspoons of granulated sugar

  • 3/4 cup of rice wine vinegar

  • Salt to taste

Cooking Instructions

  1. Cut your cucumbers into half and the half into small half-moon shapes.

  2. Place your cut cumbers, sugar and rice wine vinegar into a bowl.

  3. Stir a few times and add salt to taste. We typically use about 1/2 teaspoon.

  4. Let the cucumbers marinate in the fridge uncovered while you prepare the remainder of the meal. Enjoy after 20 minutes.
