Hot Chicken

Our family loves, loves, loves spicy food and we cannot get enough hot sauce. At a family event a few summers ago, we had a barbecue and we found once everyone was there, we didn’t have any ketchup, but we sure did have enough hot sauce! In this recipe we used one of our favorite hot sauces, Aardvark. I have prepared this chicken with various types of hot sauces and enjoyed them all so feel free to use your favorite sauce!



Ingredients

  • 2 tbs of your favorite hot sauce

  • 2 tbs of olive oil

  • 1 tsp of white vinegar

  • 2 tbs of ghee

  • 2 cloves of garlic

  • 1 tsp chili powder

  • 1 tsp of paprika

  • 2 tsp of gluten free soy sauce

  • 1.5 pounds of boneless chicken thighs

  • 1/5 tsp salt

  • 1/5 tsp pepper


A Note About Hot Sauce

As we said above we have used a few different types of hot sauce and we even have our own favorite recipe using our homegrown spicy peppers. Besides our own hot sauce, my favorite preparation involved the Aardvark hot sauce. This brand has a few different flavors but the Original Secret Aardvark is by far my favorite. Aardvark hits you with the heat of a habanero pepper and cools you off with some tomatoes. I can not stress how much I love this flavor! Yum!!

Preparation

  1. Preheat the oven to 475 degrees Fahrenheit.

  2. Pat the chicken dry. Cover both sides with salt and pepper. I would be more generous with the pepper than the salt especially if the hot sauce you picked is heavy in sodium.

  3. Put the cayenne, cumin and chili powder into a small bowl. Take a spoon and mix.

  4. Take your chicken and cover both sides with the combined spices.

  5. Heat the oil in a cast iron skillet. Once the pan is hot add your chicken skin side down for 3 minutes. You may need to work in batches to be sure not to crowd your pan. Flip the chicken and cook for an additional 3 minutes.

  6. Flip the chicken a final time and transfer your pan to the oven.

  7. Cook the chicken for an additional 10 minutes.

  8. Take your chicken out of the oven and let the meat rest for 3 minutes.

  9. While your chicken is resting prepare your sauce.

  10. In a saucepan heat the ghee over medium heat.

  11. Add your minced garlic and sauté for 1 minute.

  12. Turn the stovetop all the way to low and add your hot sauce, gluten free soy sauce and rice wine vinegar. Leave on the stovetop for one minute.

  13. Take your rested chicken and put in a large bowl. Pour your hot sauce mixture over the chicken. Rotate the chicken to ensure each piece is fully coated. Serve immediately, enjoy!
