Coconut Jasmine Rice

Often times when I make rice I prepare it using coconut milk. I love the sweet nutty taste in combination with a savory protein. Pair it as a side with any fish, shrimp or our take on Tandoori Chicken. I am sure you will love it as much as we do. I am a big fan of rice cookers, but you can easily prepare it over the stove in a pan if you don’t have one.

Prep time: 10 minutes

Cook time: 20 minutes

Servings: 6

Ingredients

  • 1 (14 ounce) can coconut milk

  • 1 1/4 cups of water

  • 1/2 Teaspoon kosher salt

  • 1 1/2 cups rinsed jasmine rice

Instructions

If using a rice cooker, combine the coconut milk, water and salt in the metal bowl. Combine thoroughly. Add the rinsed rice, combine and close the lid and press the cook button. If using a conventional pan, combine ingredients as above and bring the rice mixture to a boil. Turn the stove too simmer, place the lid on the pan and set the timer for 20 minutes.
