Asian Slaw(With a Kick!)

You know us! We love taking food to the next level spicy. Good news, we will always give you options to take it down. This Asian Slaw recipe is light, crisp and crunchy. We often pair it with our fish, Thai fish cakes or shrimp tacos. It is always delicious with Korean ribs or any meal that pairs with a yummy light asian slaw! Enjoy!

Servings: 4-6

Slaw Ingredients

  • 2 cup thinly sliced green cabbage

  • 2 cups thinly slice red cabbage

  • 1 cup julienned carrots

  • 1 cup chopped cucumbers

  • 1/2 cup finely chopped scallions

  • 1/4 cup chopped mint

  • 1/4 cup cilanto

  • 1 finely chopped and seeded jalepeno (omit if you do not like the spice)

Dressing

  • 1/2 cup lime juice

  • Salt

  • 2 teaspoons finely grated ginger

  • 1 tablespoon Tamari or coco aminos

  • 3/4 cup avocado or olive oil

  • 1 Tablespoon honey

  • 1/2 teaspoon sriracha (Optional)

  1. 1/2 cup peanuts (optional)

Directions

Combine all of the slaw ingredients and toss with a generous pinch of kosher or Himalayan salt (good quality salt!). Combine the dressing ingredients and mix in a blender. Dress the slaw and add the peanuts right before servicng! Garnish with chopped cilantro.
