Shrimp Tacos with Peach Chipotle Salsa

This fresh and flavorful dinner is one of our family summer and early fall favorites! It is light and healthy and very quick and easy to prepare. The marinade and shrimp can be prepared a day ahead of time and refrigerated. This time of year sweet, fragrant peaches are plentiful. Our first choice is from fresh from our local farmers market. The Peach Chipotle Salsa can also be served with chips as an appetizer or as a sweet salsa on top of grilled halibut, cod, or seabass. For variety we also top the tacos with our crunchy asian slaw.

Prep time: 15 minutes

Marinating time: at least an hour

Cook time: 6 minutes

Servings: 4-6

Ingredients

  • Fresh or frozen de-veined medium shrimp (1lb or approximately 21-30)

  • 1/3 cup olive or avocado oil

  • 3-4 fresh squeezed limes (approximately 1/3 cup)

  • 1/2 tsp salt

  • 1 tsp red chili pepper

  • 1 tsp ground cumin

  • 4-6 corn tortilla

Instructions

Marinade

Place all the ingredients in a bowl and stir until combined. Place the marinade in a sealed plastic bag and add the shrimp. Seal the bag and massage so all of the shrimp has contact with the marinade. Refrigerate for at least an hour.

Shrimp

The shrimp can either be grilled or cooked on a cast iron or fry pan. If grilling, heat the grill to 350. Place the shrimp in a grill pan or on a skewer and cook for approximately 3-4 minutes or until the shrimp lose their pink color. Avid over cooking.

Tortilla

Grill the corn tortilla on the grill or in the pan to warm the tortilla
